Girl Dinner.
I had a convo with someone recently about what I usually cook for lunch and dinner and it reminded me of that "girl dinner" sound that's been going around. For me, less is more! I'm looking to do the absolute least because I don't enjoy cooking. Every day I wonder what I'm going to do when I have a family and have to share that task with my husband.... whew!
For anyone who hasn't heard the TikTok sound, you can click here if you're curious. The trend got so popular that even Popeyes joined in on the fun back in July! It's basically about how girls will eat a piece of a candy bar, 2 grapes, one slice of cheese and some chips and call it dinner lol. While I personally think it's a little unhinged, I agree with the effort because there is none. I am QUEEN of making a salad. Just cut up some veggies, throw some sauce on it and it's a well balanced meal! So what do I eat for dinner? Here's my top 3 favs:
1. The White Bean Erewhon Salad- I'm not a fan of mustard but the mustard, seasoning and kale combo on this just hits different!! Either that or my palettes been elevated as I've aged.
2. Paige's Sheet Pan meal- I HATE pretty much all variation of hot dogs and sausage, until I gave this a try. Paige uses the Traderious Joseph's brand of chicken sausage and it's really not as bad as I thought. Doesn't even taste sausagey to me which is the best part! To save my cals for "somethin' sweet" I don't use the sauce that she tops it with, and it's still just as good!
3. Frozen veggies and rice- One thing about me, I will ALWAYS keep some frozen veggies. Kale, red bell peppers and white beans or green beans with chickpeas and tomatoes. Imma get my greens in.
As you can see, Paige Lindgren is my girl and just like me, she is also a less is more girlie! I hope I was able to give you some extra options to add to your "what's for dinner?" list! If you have something healthy and quick PLEASE let me know. I try to switch up my meals every week and sometimes it gets a little old after a while.
